Baked Alaska! The August Daring Baker's Challenge

 The August 2010 Daring Bakers’ challenge was hosted by Elissa of 17 and Baking. For the first time, The Daring Bakers partnered with Sugar High Fridays for a co-event and Elissa was the gracious hostess of both. Using the theme of beurre noisette, or browned butter, Elissa chose to challenge Daring Bakers to make a pound cake to be used in either a Baked Alaska or in Ice Cream Petit Fours. The sources for Elissa’s challenge were Gourmet magazine and David Lebovitz’s The Perfect Scoop.




I remember the Baked Alaskas from when I cruised  on Holland America...the lights were turned down in the dining room when it was time for dessert...the music came on... and the waiters appeared each carrying a Baked Alaska with a sparkler  lighting up the room!  Quite a parade!  I am not sure if they do that any longer.

We had the choice of making  Petit Fours or Baked Alaska and I chose the Baked Alaska,  a  very fancy ice cream dessert.  I made the brown butter pound cake just as written for the challenge recipe and added a hint of orange extract to the ice cream...it was very good!  I packed the ice cream into little glass bowls, lined with plastic wrap, and they turned out well - little domes.  



Then I used my new weapon to brown the meringue (Dan looked at me with this thing and backed out of the kitchen!)  OK so I couldn't figure it out at first and was waving it around...so what?  It all worked out and it looks beeeeuuuuutiful!

Great job! The blow torch would make me a bit nervous too, but it sounds like it would be fun to use in the kitchen. Nice job on the challenge!

Your Baked Alaska looks fantastic! And don't you just love having a kitchen torch? It's so nice to use it for something other than the usual creme brulee. :)
